Thyme Baked Potatoes with Feta

  • 4 medium potatoes
  • olive oil spray
  • 1 teaspoon fresh thyme leaves
  • 0.5 teaspoons lemon rind
  • freshly ground black pepper
  • 40g Australian reduced-fat feta


  1. Place cubed potatoes onto a lined oven tray and spray with oil. Sprinkle with chopped thyme, finely grated lemon rind and pepper. Bake at 200 degrees for 15-20 minutes or until golden and tender.
  2. Place potatoes in a serving bowl and sprinkle with feta. Serve warm.
