Ingredients

1 chicken thigh, excess fat removed and sliced

1 teaspoon tamari, reduced salt

½ teaspoon low GI honey

2 teaspoons sesame oil

2 cups seasonal raw vegetables, chopped

1 teaspoon sesame seeds (optional)

½ packet (100g) Qetoe low carb noodles

Method

  1. Noodles: Take noodles out of the packet and drain excess liquid. Soak noodles in boiling water for 1 minute and drain thoroughly. You will use half the packet for one serve. Set aside.
  2. Sauce: Mix soy, honey, and 1 teaspoon of sesame oil. Set aside.
  3. In a non-stick fry pan, heat 1 teaspoon of sesame oil on medium heat. Add chicken and stir fry until golden. Remove and set aside.
  4. Add vegetables to the fry-pan and stir fry until cooked. Add chicken and noodles back to the pan and stir to combine. Next add sauce and stir through until well coated and heated through.
