Ingredients

500g extra-firm tofu, pressed and cubed

200g oyster mushrooms, chopped

1 red capsicum, cut into chunks

1 large zucchini, sliced

1 red onion, chopped

Wooden skewers (soaked in water for 30 mins)

Marinade

2 tbsp olive oil

1 tbsp reduced salt tamari

1 clove garlic, minced

1 tbsp toasted sesame seeds

Cracked black pepper to taste

Method

  1. Marinade: Mix olive oil, tamari, garlic, sesame seeds, and pepper in a bowl.
  2. Toss tofu and mushrooms in the marinade. Let sit for at least 30 minutes (or longer for deeper flavour).
  3. Thread tofu, mushrooms, capsicum, and zucchini onto soaked skewers.
  4. Preheat BBQ or grill pan to medium-high.
  5. Grill skewers for 3-4 minutes per side until tofu is golden and veggies are lightly charred.
  6. Garnish with fresh herbs or a squeeze of lime.
  7. Pair with a crunchy salad or grilled greens.
