
Chimichurri
Ingredients
½ cup extra virgin olive oil
2 tbsp red wine vinegar
3 large cloves garlic, crushed
½ cup parsley, finely chopped
1 tsp dried oregano
1 tsp salt
1/4 tsp pepper to taste
1 small red chilli, finely chopped (or about 0.5 Tbsp dried red chili flakes)
Method
- Combine all ingredients in a bowl.
- Cover and let mixture sit for at least 2 hours for flavours to develop.
- Serve over seared meat, vegetables or even your morning eggs!
