Ingredients

2 slices low-carb bread

2 eggs

2 slices tomato

1 teaspoon mayonnaise

1 teaspoon olive oil

Baby spinach leaves

Method

  1. Heat olive oil in a small non-stick pan over medium heat.
  2. Crack the eggs into the pan and fry until the whites are set but yolks are still soft (or cook longer if you prefer fully cooked yolks).
  3. Whilst eggs are cooking, toast the bread until golden and slightly crisp.
  4. Spread mayonnaise evenly on one slice of toasted bread.
  5. Layer the fried eggs, tomato slices, and fresh spinach on the toast. Add the second slice of toast on top. Serve immediately whilst warm.
