Ingredients

1 cup cooked quinoa 

1 cup canned chickpeas, rinsed and drained 

2 x 185g canned tuna in springwater, drained 

1 large avocado, peeled, pitted and diced 

1 cup baby spinach, shredded 

½ cup diced canned tomato, drained  

3 spring onion, finely chopped   

1/3 cup coriander, chopped  

Dressing 

1 Tablespoon lime juice 

1 Tablespoon extra-virgin olive oil  

Pinch of salt and black pepper 

Method

  1. In a small bowl or jar, add lime juice, olive oil, salt and pepper. Mix or shake well. 
  2. In a large bowl add all ingredients (except dressing) and toss gently. 
  3. Drizzle over dressing and mix well to coat all the salad ingredients. 
  4. Divide salad evenly into 4 salad bowls. Enjoy.
