Ingredients

4 x 100g fresh salmon fillets

Olive oil for cooking

Salad

400g green beans, blanched

4 ripe tomatoes, chopped

4 boiled eggs, quartered

½ cup olives, rinsed and patted dry

4 cups mixed lettuce leaves

1 red capsicum, chopped

1 red onion, thinly sliced

1 large clove of garlic

Vinaigrette

1 Tablespoon red wine vinegar

½ teaspoon Dijon mustard

2 Tablespoons extra virgin olive oil

Method

  1. Use the garlic clove halves to rub the inside a large salad bowl. Add all other salad ingredients to the bowl and toss to combine. Cover and place in the refrigerator.
  2. Dressing: mix the red wine vinegar and mustard together and then whisk in the olive oil until creamy looking, smooth consistency appears. Cover and set aside.
  3. Salmon: Cook fillets to your liking in a fry-pan or air-fryer.
  4. Add dressing to salad and toss gently to combine.
  5. Divide salad between four plates and top with a salmon fillet.
