Add all other salad ingredients to the bowl and toss to combine. Cover and place in the refrigerator. Dressing: mix the red wine vinegar and mustard together and then whisk in the olive oil until creamy looking, smooth consistency appears. Cover and set aside. Salmon: Cook fillets to your liking in a fry-pan or air-fryer. Add dressing to salad and toss gently to combine. Divide salad between four plates and top with a salmon fillet.
