Ingredients

2 slices low-carb bread*

1 large egg

1 Tablespoon reduced fat milk

¼ tsp cinnamon

¼ tsp vanilla extract

1 teaspoon butter (or olive oil)

2 tablespoons ricotta, reduced fat

4 strawberries, sliced

Method

  1. In a shallow bowl, whisk egg, milk, cinnamon and vanilla.
  2. Dip each slice of low-carb bread in the egg mixture, coating both sides well.
  3. Heat a non-stick pan over medium heat and add a little butter.
  4. Cook bread slices for 2–3 minutes on each side, or until golden brown.
  5. Halve the toast on the diagonal and spread each slice with ricotta. Next top with sliced strawberries and serve.
