Apricot and Chocolate Balls

Don't be deceived these sweet treats are also nutritious. Made by blending Weet-bix with dried apricots they are also packed with fibre, vitamins and minerals. Served with a drizzle of chocolate they are the perfect treat for a special occasion.

Ingredients

  • 200g dried apricots
  • 1/4 cups caster sugar
  • 2 gluten free Weet-Bix
  • 1 tablespoon water
  • 50g dark cooking chocolate

Method

  1. Place apricots, sugar and Weet-Bix into a food processor and process until smooth
  2. Add water gradually and continue to process until well combined
  3. Using wet hands, form mixture into balls
  4. Drizzle balls with melted chocolate and leave to set
