Ingredients

2 salmon fillets (150g each)

1 teaspoon turmeric powder

2 garlic cloves, crushed

4 teaspoons olive oil

1 small, sweet potato, cubed

3 cups broccoli florets

Salt & pepper to taste

Lemon wedges

Method

  1. Preheat oven to 200°C.
  2. Toss sweet potato cubes and broccoli with 2 teaspoons of olive oil, salt, and pepper. Spread evenly on a baking sheet.
  3. In a small bowl, mix turmeric, minced garlic, 2 teaspoons of olive oil, salt, and pepper. Rub this mixture over both salmon fillets. Place salmon on a lined baking tray and place in oven.
  4. Bake salmon and vegetables for 15 minutes until salmon is cooked through and vegetables are cooked.
  5. Serve salmon with roasted sweet potato and broccoli. Add a squeeze of lemon.
