Ingredients

500 g chicken mince

1 tablespoon peri-peri sauce

1 tbsp olive oil

1 capsicum, diced

1 red onion, diced

Iceberg or cos lettuce leaves

½ bunch coriander, chopped

Lime wedges

1 large avocado

Method

  1. In a small bowl, mash avocado with a squeeze of lime and salt. Cover and place in the refrigerator.
  2. Add olive oil to a large frypan. Sauté chicken mince with onion and capsicum.
  3. Stir in peri-peri sauce and cook until chicken is cooked through.
  4. Serve in lettuce cups with smashed avocado and lime.
