Ingredients

1 small, sweet potato, peeled and diced

4 large boiled or poached eggs

3 cups fresh spinach

1 tablespoon extra virgin olive oil

1/4 teaspoon turmeric

1/4 teaspoon black pepper

Pinch of sea salt

½ avocado, chopped

1 handful of coriander (or parsley) chopped

½ fresh lemon

Method

  1. Toss diced sweet potato with olive oil, turmeric, black pepper, and sea salt.
  2. Roast at 200°C (400°F) for approximately 20 minutes or sauté in a pan until tender and golden.
  3. In a separate pan, heat a splash of olive oil. Add spinach and sauté until just wilted. Season lightly with salt and pepper.
  4. On two serving plates, add roasted sweet potato, sautéed spinach, avocado and eggs.
  5. Garnish with coriander and a squeeze of lemon juice.
