Roast at 200°C (400°F) for approximately 20 minutes or sauté in a pan until tender and golden. In a separate pan, heat a splash of olive oil. Add spinach and sauté until just wilted. Season lightly with salt and pepper. On two serving plates, add roasted sweet potato, sautéed spinach, avocado and eggs. Garnish with coriander and a squeeze of lemon juice.
