Ingredients

600 g lean diced beef

300 g mushrooms, halved

2 celery stalks, sliced

1 small carrot, finely diced

1 small swede, diced

400 g no added salt crushed tomatoes

2 cups reduced salt beef stock

2 cloves garlic, crushed

1 tsp smoked paprika

1 bay leaf

1 tablespoon olive oil

Salt and pepper to taste

Method

  1. Heat olive oil in a large casserole pot.
  2. Add diced beef and brown (may need to do this in batches).
  3. Add vegetables and garlic to the beef. Cook for a further 5 minutes.
  4. Stir in tomatoes, stock, paprika, salt, pepper and bay leaf.
  5. Simmer, covered for approximately 2 hours until tender.
  6. Remove bay leaf and serve.
