Ingredients

500g lean beef, pork, turkey or chicken mince*

Seasoning

2 teaspoons smoked paprika

2 teaspoons ground cumin

1 teaspoon chili powder

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon oregano

½ teaspoon salt + pepper

Juice of 1 lime

1 tablespoon olive oil

½ cup canned black beans, drained

Toppings

4 cups shredded iceberg lettuce

1 cup cherry tomatoes, halved

1 red onion, thinly sliced

1 avocado, mashed

Fresh coriander chopped

½ cup grated cheese

4 tablespoons Greek yoghurt, reduced fat

Fresh lime juice

Method

  1. Mix seasoning, lime juice, and oil in a bowl. Add mince to the bowl and coat.
  2. Add seasoned mince to a non-stick large pan and cook until browned and fragrant.
  3. Add black beans and stir until thoroughly combined and warmed through.
  4. Divide shredded lettuce into 4 serving bowls. Top with seasoned mince mix.
  5. Next add, onion and tomatoes. Finish with smashed avocado, yoghurt, cheese, coriander and a squeeze of lime.
