Ingredients

500g chicken thigh fillets, fat trimmed*

2 tablespoons olive oil

Juice of 1 lemon

2 garlic cloves, crushed

2 tsp dried oregano

Freshly ground black pepper and salt

Wooden or metal skewers

4 low carb wraps, warmed

Tomato Salad

300g tomatoes

½ small red onion, finely sliced

Dressing 

1 Tbsp extra virgin olive oil

1 Tbsp white wine vinegar

½ tsp Dijon mustard

Flat leaf parsley or basil leaves, torn

Sea salt and black pepper

Tzatziki 

1 cup (250g) low fat Greek yoghurt

½ small cucumber

½ small clove garlic

A few mint leaves, finely chopped

A few dill sprigs, finely chopped

1 teaspoon lemon juice, freshly squeezed

Freshly ground black pepper and salt

Method

Marinade Chicken

  1. If using wooden skewers, to prevent burning, soak wooden skewers in water for 30 minutes.
  2. Chop chicken into bite size chunks.
  3. Place chicken in a large bowl along with all marinade ingredients. Ensure all chicken pieces are coated with marinade.
  4. Marinade in the refrigerator for at least 4 hours (or overnight)

Easy Tomato Salad 

  1. In a small bowl or jar, add olive oil, vinegar and mustard. Mix or shake well.
  2. Cut the tomatoes into thick slices. Arrange on a platter and scatter over red onion.
  3. Place in the refrigerator until ready to serve.

Tzatziki 

  1. Rinse and trim the ends of the cucumber. Cut the cucumber in half lengthways and use a teaspoon to scoop out the seeds. Using a grater, grate the cucumber in a large bowl. Next, place the grated cucumber in a metal strainer and add a sprinkling of salt. Use the back of a spoon or your fist to squeeze out the excess liquid. Discard the liquid.
  2. Place strained cucumber in another bowl. Add all other ingredients and mix to combine.
  3. Garnish with a few dill or mint sprigs. Cover and place in the refrigerator until ready to serve.

Chicken

  1. Thread chicken onto wooden skewers and place on an oiled barbecue grill. Cook for approximately 5 minutes each side or until golden and cooked through.
  2. Remove from barbecue, cover and allow to rest for several minutes.
  3. Warm wraps in the microwave for 10 seconds.

Serving

  1. Take tomato salad out of the refrigerator. Drizzle over dressing and season with a pinch of sea salt and pepper. Scatter basil or parsley over the salad.
  2. Add chicken pieces, tomato salad and tzatziki onto a warmed wrap. Roll up and enjoy!
