Ingredients

2 chicken thighs, excess fat removed

1 cup cherry tomatoes

½ zucchini, sliced

1 small red onion, cut into wedges

1 tablespoon olive oil

1 teaspoon dried oregano or Italian herbs

Salt and pepper to taste

Method

  1. Preheat oven to 200°C
  2. Place chicken and vegetables on a small tray. Drizzle with oil and season with oregano, salt and pepper. Mix with your hands the chicken and vegetables.
  3. Bake for 30–35 minutes or until chicken is cooked through.
  4. For a complete meal, serve with vegetables of your choice (e.g., Warm Potato and Green Bean Salad)
