Ingredients

4 slices low-carb bread*

2 large eggs

2 tablespoons reduced fat milk

1 teaspoon pure cocoa

½ teaspoon vanilla extract

2 teaspoons butter (or olive oil)

Topping ideas:

Greek yoghurt

Fresh berries

Chopped nuts

Method

  1. In a shallow bowl, whisk eggs, milk, cocoa and vanilla until well combined.
  2. Dip each slice of low-carb bread in the egg mixture, coating both sides well.
  3. Heat a non-stick pan over medium heat and add a little butter.
  4. Cook bread slices for 2–3 minutes on each side, or until golden brown.
  5. Serve warm on its own or with toppings of choice.
