Ingredients

2 large eggs

2 tablespoons milk of your choice

¼ cup spinach, chopped

3 small mushrooms, sliced

½ small tomato, diced

2 tablespoons grated cheese

1 teaspoon olive oil

Salt & pepper, to taste

½ medium avocado, sliced

Method

  1. Whisk eggs with milk, salt, and pepper.
  2. Heat oil in a non-stick pan. Sauté mushrooms and tomato for 2–3 minutes.
  3. Add spinach, cook until wilted.
  4. Pour in eggs, tilt pan to spread evenly.
  5. Sprinkle with cheese, cook until set. Fold and serve with sliced avocado.
