Ingredients

500g lean pork mince  

1 onion, diced 

2 cloves garlic, crushed  

1 large carrot, peeled and diced 

1 zucchini, grated 

1 cup brown lentils, rinsed and drained  

800g canned tomatoes  

200ml red wine 

2 Tbsp tomato paste, no added salt 

½ teaspoon smoked paprika  

1 teaspoon oregano 

Salt and pepper for seasoning  

1 tsp olive oil  

Method

  1. In a large, non-stick pot heat olive oil on medium heat. Add onion and mince, breaking up the mince with a spoon, until the onions are soft and mince is browned.  
  2. Add garlic, carrots, zucchini, lentils, tomato paste, oregano and paprika cook for 3 minutes. Add the wine and tinned tomatoes and bring to the boil. Season with salt and pepper. Simmer on low and partially covered for approximately 15 minutes or until sauce has thickened.
