Ingredients

500g lean beef mince

1 small brown onion, finely grated, excess liquid removed

1 small carrot, grated

½ small zucchini, grated

1 tsp Dijon mustard

1 tablespoon tomato paste, no added salt

½ teaspoon garlic powder or 1 clove fresh garlic

Salt & pepper to taste

1 tbsp olive oil

1 teaspoon dried oregano

½ teaspoon smoked paprika

Burger Toppings

1 large avocado, sliced

4 slices cheddar cheese, reduced fat

4 fried eggs

8 lettuce leaves (iceberg or baby cos)

4 slices beetroot

1 large tomato, sliced

Pickles (optional)

Sauce: tomato sauce, mayonnaise or Tzatziki

Method

  1. In a large bowl, combine beef mince, grated onion, carrot, zucchini, egg, Dijon mustard, tomato paste, garlic, salt & pepper. Mix gently. Divide into 4 equal patties and flatten slightly. Refrigerate for at least one hour so the patties form.
  2. Heat olive oil in a large non-stick frypan or barbecue grill over medium-high heat.
    Cook patties for approximately 5 mins per side or until cooked through. Add cheese slices on top in the last minute to melt. Remove, place on a plate and cover.
  3. In the same pan, fry eggs sunny side up until cooked to your liking.
  4. On each plate, place a large lettuce leaf as the ‘bun base.’ Stack with burger patty, melted cheese, tomato, onion, avocado, pickles (optional), fried egg and sauce/mayonnaise/Tzatziki. Serve leftover salad on each plate.
