Mix gently. Divide into 4 equal patties and flatten slightly. Refrigerate for at least one hour so the patties form. Heat olive oil in a large non-stick frypan or barbecue grill over medium-high heat. Cook patties for approximately 5 mins per side or until cooked through. Add cheese slices on top in the last minute to melt. Remove, place on a plate and cover. In the same pan, fry eggs sunny side up until cooked to your liking. On each plate, place a large lettuce leaf as the ‘bun base.’ Stack with burger patty, melted cheese, tomato, onion, avocado, pickles (optional), fried egg and sauce/mayonnaise/Tzatziki. Serve leftover salad on each plate.
