Ingredients

400g firm tofu, pressed and crumbled

1 small carrot, grated

2 cloves garlic, minced

¼ small red onion, finely chopped

2 tablespoons almond meal

1 tablespoon 100% natural peanut butter

1 tablespoon salt reduced tamari

1 tablespoon olive oil

½ teaspoon cumin

Salad

4 cups salad

4 small tomatoes, sliced

1 small avocado, stone removed

Method

  1. Wrap tofu in paper towel and press to remove excess moisture. Crumble into a large bowl.
  2. Add carrot, onion, garlic, almond meal, tahini, soy sauce, oil and cumin. Mix until fully combined. Let sit for 5 minutes to allow almond meal to absorb some moisture.
  3. Shape mixture into 4 firm patties. If the mixture is too soft, add a little more almond meal.
  4. Place in the refrigerator for at least one hour to allow patties to become firm.
  5. Heat a non-stick fry-pan with a little oil over medium heat. Cook patties 4–5 minutes per side, until golden and firm.
  6. Smashed avocado: In a small bowl, roughly mash avocado with the back of a fork. Add a squeeze of lemon juice and a pinch of salt and pepper.
  7. Assemble lettuce and sliced tomato on four separate plates. Place one tofu patty on top of each salad. Add a spoon of smashed avocado on top of each burger.
