Ingredients

400g tinned salmon, drained  

1 teaspoon dried dill  

½ cup almond meal* 

1 large egg  

½ small onion, finely chopped  

Salt and pepper to taste  

1 teaspoon grated lemon zest 

1 tablespoon extra-virgin olive oil  

Method

  1. Mash the salmon with a fork and then add all the other ingredients (except the olive oil). Mix well and form into 8 small patties. Refrigerate for at least an hour so the patties become firm. 
  2. Brush a large frying pan with olive oil. Place patties in the pan and cook on medium heat for 4 minutes. Turn patties over carefully and cook for a further 4 minutes until golden brown. 
  3. Makes 8 patties (2 patties per person)
