Mix well and form into 8 small patties. Refrigerate for at least an hour so the patties become firm. Brush a large frying pan with olive oil. Place patties in the pan and cook on medium heat for 4 minutes. Turn patties over carefully and cook for a further 4 minutes until golden brown. Makes 8 patties (2 patties per person)
