Ingredients

185g can tuna, in spring water, drained

3 cups coleslaw mix

1 avocado, diced

¼ cup pumpkin seeds

1 tbsp lemon juice

¼ cup Greek yoghurt

1 tbsp whole-egg mayo

½ tsp Dijon mustard

Pepper to taste

Method

  1. Dressing: in a small bowl, whisk yoghurt, mayonnaise, lemon, Dijon mustard and pepper.
  2. In a salad bowl, mix tuna, coleslaw, avocado.
  3. Add dressing and stir gently.
  4. Top with pumpkin seeds and serve.
