Ingredients

3 large eggs, lightly whisked

1 small tomato, chopped

½ cup baby spinach, finely chopped

1 tablespoon feta

1 teaspoon olive oil

Salt and pepper to taste

1 slice Burgen low carb bread

Method

  1. Heat olive oil in a Fry pan.
  2. Sauté tomatoes for 2 minutes then add spinach.
  3. Pour in whisked eggs and cook until softly set.
  4. Top with feta.
  5. Serve with 1 slice of toasted low carb Burgen toast
