Ingredients

4 x 180g skinless salmon fillets

800g green beans, trimmed

1 1/2 tablespoons olive oil

2 tablespoons white wine vinegar

1 tablespoon roughly chopped tarragon leaves

2 teaspoon Dijon mustard

Lemon wedges to serve

Method

  1. Preheat oven to 180°C (fan-forced). Line a baking tray with baking paper.
  2. Place the salmon fillets on the tray, drizzle with 1 olive oil and season lightly with salt and pepper.
  3. Place salmon in the oven and cook for 15 minutes until salmon in cooked through. Cooking time may vary depending on the thickness of the salmon.
  4. Just before salmon is cooked, steam green beans and drain. Add beans to a bowl. Drizzle some olive oil over the beans and toss gently. Cover and set aside.
  5. Whisk vinegar, tarragon, mustard, 2 teaspoons warm water and 2 tablespoons of olive oil in a bowl until combined. Serve salmon on beans, drizzled with vinaigrette.
