Ingredients

2 chicken breasts, steamed and shredded

1 small ripe mango, diced

1 medium red capsicum, thinly sliced

1 Lebanese cucumber, sliced

½ cup mint leaves, chopped

½ cup coriander leaves, chopped

1 small red onion, thinly sliced

1 medium avocado, sliced

½ cup cashews

Dressing

1 tbsp fish sauce

3 tbsp lime juice

1 tsp low GI honey or natural sweetener

1 tbsp sesame oil

1 small chilli, chopped (optional)

Method

  1. In a large bowl, mix all salad ingredients together, gently.
  2. Dressing: in a small bowl or jar, combine dressing ingredients together.
  3. Pour dressing over salad and toss gently.
