Ingredients

½ cup salt reduced baked beans

2 eggs

1/4 tsp smoked paprika

Salt & pepper to taste

One handful of baby spinach

1 tablespoon of grated cheddar or feta

Method

  1. Preheat oven to 180°C (160°C if using a fan forced oven).
  2. Spoon the baked beans into a mini baking dish.
  3. Make two little wells in the centre of the beans and crack two eggs into each hole.
  4. Sprinkle with paprika and cheese.
  5. Bake for 12–15 minutes, or until the egg white is just set and yolk still runny (or longer for a firm yolk).
  6. Serve with handful of baby spinach for greens.
