Ingredients

1 large chicken breast, steamed and shredded

1 cup canned chickpeas, drained

1 small red capsicum, diced

1 small cucumber, diced

2 tomatoes, chopped

½ red onion, finely chopped

100g reduced-fat feta, crumbled

1 tbsp olive oil

1 tbsp red wine vinegar

1 tsp dried oregano or fresh parsley

4 cups salad greens

Freshly ground black pepper

Method

  1. Combine chickpeas, vegetables, chicken, and feta in a large bowl.
  2. Dressing: In a small bowl or jar, whisk or shake olive oil, vinegar, oregano, and pepper together. Drizzle over salad.
  3. Drizzle dressing over salad and toss gently to combine.
  4. Add salad leaves on 4 separate plates. Top with salad mix and serve.
