Line a small loaf tin with baking paper. Crumble tofu into a large bowl. Add eggs and mash with a fork until well combined. Stir in onion, garlic, carrot, zucchini, oats, almond meal, linseed, soy sauce, tomato paste, herbs and spices. Mix well. Spoon mixture into loaf tin and press down firmly. Lightly spray the top with olive oil. Bake for 40–45 minutes until firm, lightly golden and set in the centre. Stand for 10 minutes before slicing.
