Ingredients

2 × 115 g salmon fillets

1 teaspoon extra-virgin olive oil

1 teaspoon finely grated lemon zest

1 tablespoon lemon juice

1 garlic clove, crushed

Freshly ground black pepper

Lemon wedges, to serve

Smashed peas

1½ cups frozen peas, thawed

1 tablespoon extra-virgin olive oil

1 tablespoon lemon juice

15 g finely grated Parmesan

1 tablespoon fresh mint, chopped

Freshly ground black pepper

Method

  1. Preheat oven to 200°C. Place salmon on a lined baking tray.
  2. Combine the olive oil, lemon zest, lemon juice and garlic. Brush over the salmon and season with black pepper.
  3. Bake for 10–12 minutes, or until the salmon is cooked through and flakes easily.
  4. Meanwhile, place the peas in a bowl and roughly mash with a fork. Stir through the olive oil, lemon juice, Parmesan and mint. Season with black pepper.
  5. Divide the smashed peas between two plates and top with the salmon. Serve with lemon wedges.
