Place salmon on a lined baking tray. Combine the olive oil, lemon zest, lemon juice and garlic. Brush over the salmon and season with black pepper. Bake for 10–12 minutes, or until the salmon is cooked through and flakes easily. Meanwhile, place the peas in a bowl and roughly mash with a fork. Stir through the olive oil, lemon juice, Parmesan and mint. Season with black pepper. Divide the smashed peas between two plates and top with the salmon. Serve with lemon wedges.
