Ingredients

400g chicken thigh, cooked and chopped

500g cauliflower florets

1 cup canned chickpeas, rinsed and drained

4 cups lettuce leaves

2 tablespoons olive oil

2 tablespoons fresh lemon juice

1 tablespoon tahini

2 tablespoons pepitas

Method

  1. Steam cauliflower until tender. Drain and set aside.
  2. Dressing: Add olive oil, lemon juice and tahini in a small bowl. Whisk until smooth and creamy. Set aside.
  3. In large bowl, add cauliflower, chicken, chickpeas and lettuce. Toss gently. Drizzle over dressing and stir gently to combine.
  4. Divide salad between 4 plates of bowls. Garnish with pepitas and serve.
