Ingredients

2 ripe bananas 

4 eggs 

1 cup rolled oats 

1 tsp cinnamon (optional) 

1 tsp baking powder (optional, for fluffiness) 

Olive oil for cooking  

Method

  1. Using a blender, blend all ingredients until smooth (or mash the banana and mix by hand for a chunkier texture). 
  2. Heat a non-stick pan over medium heat. Lightly grease with a little olive oil. 
  3. Pour batter into small pancakes (about ¼ cup each). 
  4. Cook 2–3 minutes on one side, flip, and cook another 1–2 minutes until golden. You will need to do 2-3 batches.
