Ingredients

4 x 150g barramundi fillets

1 tbsp olive oil, lime juice, pepper

Salsa

1 small mango, diced

1 large avocado, diced

½ cup black beans (rinsed)

1 small red capsicum, finely diced

½ small red onion, finely diced

1 teaspoon olive oil

Squeeze of lime juice but wedges to serve

Pinch of salt and pepper

¼ cup coriander chopped

Lime wedges to serve

Rocket or baby spinach to serve

Method

  1. In a bowl, toss salsa ingredients together. Place, covered in the refrigerator until ready to serve.
  2. Rub barramundi with 1 tablespoon of olive oil, lime, and pepper. Grill or barbecue 4-5 minutes per side (depends on the thickness of the fish).
  3. Serve fish with salsa and a handful of rocket or baby spinach.
