Ingredients

1 cup cooked quinoa 

1 cup canned black beans, rinsed and drained 

1 cup fresh, diced mango  

1 large avocado, peeled, pitted and diced 

1 cup diced cucumbers 

1 cup diced tomato 

1 red capsicum, diced 

1 small red onion, finely diced 

½ cup pepitas 

½ cup coriander, chopped 

Dressing 

¼ cup fresh lime juice 

¼ cup extra virgin olive oil  

½ tsp chipotle powder  

Salt and black pepper 

Method

  1. Quinoa: Cook quinoa as per instructions. Set aside to cool.  
  2. Dressing: in a small bowl or jar, add juice, olive oil, chipotle powder, salt and pepper.  
  3. Salad: add quinoa to a large bowl. Add all over salad ingredients and mix gently to combine.  
  4. Drizzle dressing over salad.
