Heat 1 tablespoon of sesame oil in a large non-stick wok or frying pan over high heat. Add the beef in batches and stir-fry for 2–3 minutes until browned. Transfer to a plate. Add the other tablespoon of sesame oil to the wok. Add the capsicum, carrot, snow peas and mushrooms and stir-fry for 3–4 minutes until just tender. Return the beef to the wok and add the sauce. Toss for 1–2 minutes until the sauce thickens and coats the beef. Stir through the spring onions and almonds. Sprinkle with sesame seeds and serve immediately.
