Ingredients

4 x 120g salmon fillets

2 teaspoons olive oil

1 tablespoon grated lemon zest

1/2 teaspoon salt

1/4 teaspoon pepper

2 tablespoons thinly sliced basil leaves

2 medium lemons, thinly sliced

Green Beans

600g green beans, trimmed

1 tablespoon olive oil

1 small garlic clove, thinly sliced

½ cup flaked almonds, toasted

Method

  1. Preheat oven to 180C. Place salmon in a baking dish lined with baking paper.
  2. Drizzle with olive oil. Sprinkle with lemon zest, salt, pepper and basil; top with lemon slices.
  3. Cook for approximately 20 minutes or until cooked to your liking.
  4. Whilst salmon is cooking, steam beans until just tender. This will take approximately 7 minutes. Drain well and set aside.
  5. Heat 1 tablespoon of olive in a pan, cook garlic until fragrant. Toss beans through and cook for 1 minute until well coated. Place beans on a platter and sprinkle with toasted almonds.
  6. Serve salmon fillets with green bean toss.
