Ingredients

1 fish fillet of your choice

6-9 slices of zucchini (1 mdiu

2 teaspoons melted butter

1 tsp parsley, chopped

1 tsp Mingle Lemon Pepper Seasoning

1 lemon slice

1 long chilli, finely sliced

2 medium tomatoes, chopped

¼ small red onion, finely diced

2 teaspoons olive oil

1 teaspoon white wine vinegar

¼ teaspoon Dijon mustard

Method

  1. Lay out a rectangular sheet of baking paper. Fold back and forth like a fan, then firmly twist both ends. Gently pull the middle outward to create a boat shape. Place on a baking tray.
  2. Lay zucchini slices across the bottom of the paper boat. Place fish fillet on top.
  3. Whisk together melted butter, parsley and Lemon Pepper Seasoning. Drizzle over fish and top with a lemon slice.
  4. Bake at 180 degrees C for 20 minutes (until fish is opaque and flakes easily).
  5. Salad: in a small bowl, combine chopped tomato and onion. Add olive oil, white wine vinegar and Dijon mustard. Toss to combine. Place in refrigerator until ready to serve.
  6. Garnish with extra parsley and fresh chilli before serving. Serve with salad.
