Dip bread in the egg mixture, coating both sides well. Heat a non-stick pan over medium heat and add a little butter. Cook bread for 2–3 minutes on each side, or until golden brown. Serve French toast, warm with a dollop of lactose free Greek yoghurt, chopped blueberries and walnuts.
