Ingredients

1 slice gluten free wholemeal bread *

1 egg

1 Tablespoon lactose free milk

¼ tsp cinnamon

¼ tsp vanilla extract

1 teaspoon butter (or olive oil)

2 tablespoons blueberries (or strawberries)

1 tablespoon lactose free yoghurt

1 tablespoon walnuts, roughly chopped

Pure maple syrup for drizzling (if desired)

Method

  1. In a shallow bowl, whisk egg, milk, cinnamon and vanilla.
  2. Dip bread in the egg mixture, coating both sides well.
  3. Heat a non-stick pan over medium heat and add a little butter.
  4. Cook bread for 2–3 minutes on each side, or until golden brown.
  5. Serve French toast, warm with a dollop of lactose free Greek yoghurt, chopped blueberries and walnuts.
