Ingredients

500 g lean beef mince

1 tablespoon extra-virgin olive oil

1 small brown onion, finely diced

2 garlic cloves, crushed

1 red capsicum, diced

2 cups broccoli florets, chopped

1 × 400 g can diced tomatoes, no added salt

1 teaspoon dried oregano

1 teaspoon smoked paprika

½ teaspoon ground cumin

1 legumes e.g., brown lentils or black beans rinsed & drained

80 g feta, reduced fat, crumbled

2 tablespoons fresh parsley, chopped

Freshly ground black pepper

Lemon wedges, to serve

Method

  1. Heat the olive oil in a large non-stick frying pan over medium-high heat. Add the onion and capsicum and cook for 3–4 minutes until softened.
  2. Add the garlic and beef mince. Cook for 5–6 minutes, breaking up the mince with a wooden spoon, until browned.
  3. Stir through the oregano, smoked paprika and cumin.
  4. Add the diced tomatoes and broccoli. Cover and simmer for 6–8 minutes, until the broccoli is tender and the beef mixture has thickened.
  5. Stir through the legumes and cook for another 2–3 minutes until heated through.
  6. Divide between bowls and top with feta and parsley. Serve with lemon wedges and black pepper.
