Ingredients

1 small chicken thigh, cooked, shredded or 1 small can tuna in spring water, drained

1 cup mixed salad greens

½ cup steamed broccoli or green beans

¼ cup cherry tomatoes, halved

¼ avocado chopped

1 tablespoon nuts or seeds of your choice

1 tablespoon olive oil

1 teaspoon apple cider vinegar or lemon juice

Salt, pepper to taste

Method

  1. In a large bowl, add all ingredients except the olive oil and vinegar.
  2. Toss lightly. Add olive oil and vinegar and stir to coat the ingredients.
  3. Enjoy straight from the bowl!
