Ingredients

100g cheddar cheese  

2 slices, low carb bread (Burgen 85% Lower carb) 

2 hard-boiled eggs, peeled and halved 

½ Lebanese cucumber, sliced  

½ cup cherry tomatoes 

1 small green apple, sliced (Granny Smith or Bramley) 

4 small, whole pickles 

1 handful of salad greens  

1 tablespoon pickles or tomato chutney  

Method

  1. Assemble the ingredients on two plates. 
  2. Spoon a small amount of chutney or pickles into small bowls on the side for dipping.
