Ingredients

1 small 95g can of tuna in spring water, drained

1/4 cup baby spinach, chopped

1 teaspoon mayonnaise

¼ teaspoon Dijon mustard

Black pepper to taste

2 slices low-carb bread

1 thin slice of Mozzarella cheese

Olive oil for toasting

Method

  1. In a bowl, mix the drained tuna, mayonnaise, mustard, chopped spinach, and pepper.
  2. Spread the tuna mixture evenly over one slice of low-carb bread. Top with cheese.
  3. Place the other bread slice on top
  4. Heat a pan over medium heat. Lightly butter or oil the pan.
  5. Toast the sandwich for 3–5 minutes each side (or until bread is golden and cheese is melted). Alternatively, you can use a toasted sandwich maker.
  6. Remove from pan, slice, and serve warm.
