Ingredients

2 eggs 

1/4 cup chopped spinach 

1/4 cup diced tomatoes 

¼ cup cheddar cheese 

Salt and pepper taste 

1 teaspoon olive oil  

Method

  1. In a bowl, add eggs, salt and pepper. Whisk gently.  
  2. Add olive oil to a large frypan and place on medium heat. Pour in egg mixture. Let the mixture sit for a few seconds until they start to set at the edges. 
  3. Using a spatula, gently stir the eggs from the edges toward the centre, tilting the pan to let uncooked egg flow underneath.  
  4. Sprinkle spinach, tomato and cheese over one half of the omelette. 
  5. Carefully fold the omelette in half using the spatula. Let it cook for another 30 seconds, then slide it onto a plate.
