Apricot & Pistachio Chicken Patties
These easy to make patties are great in the lead up to summer as a healthy alternative to beef burgers.
- To Prep: 10 minutes
- To Cook: 10 minutes
500g chicken mince
3 slices multi-grain bread
90g pistachio nuts
160g dried apricots
- In a bowl, combine the mince, grated bread, chopped pistachios and diced apricots, and season with cracked pepper.
- Roll into 4 patties and place on a baking paper-lined baking tray.
- Chill for 20 minutes, then place into a non-stick grill pan over medium heat. Cook the patties for 4 to 5 minutes on each side or until golden and cooked through.
These are delicious served in a whole-grain wrap with shaved carrot, beetroot ribbons, apple slices and crisp lettuce.
